1 juice orange (organic
if possible)
12 whole cloves
2 tbsp olive oil
2 cloves garlic, finely chopped
2 med onions, coarsely chopped
2 med leeks, chopped white part
1 cup med size mushrooms
3 large carrots, cut in 1/2" pieces
1 rib celery, finely chopped
1 large red bell pepper, diced
1/2 cup golden raisins
2 cups chopped plum tomatoes
1 1/2 cups brown lentils, rinsed
3 cups vegetable stock
2 tsp ground coriander seeds
1/2-3/4 tsp ground cardamom
Two 2" cinnamon sticks
sea salt and pepper

Cut orange in half. Squeeze out juice and reserve.
Stick cloves into peels. Set aside. Heat oil in heavy saucepan.
Add garlic, onions and leeks. Saute till leeks soften. Add mushrooms,
carrots, celery and red pepper. Cook one minute at medium heat.
Add raisins, tomatoes, lentils, stock, spices, reserved orange juice
and clove studded peels. Make sure peels are submerged. Boil, reduce
heat and simmer covered 40-50 minutes. Remove peels. Stir well.
Add sea salt and pepper.
